Homemade Loaded Mashed Potatoes

Have left over mashed potatoes???? Make these yummy 
Loaded Potato Bites
*Makes 18-24 bites depending on size





Ingredients:
- 2 cups leftover mashed potatoes
- 2 tablespoons of flour
- 2/3 cup of shredded cheddar cheese
- 3 strips bacon
- 1/3 cup scallions, chopped
- 1 egg
- 1 ¼ - 1 ½ cups Italian bread crumbs
- Oil for frying
- Salt and Pepper
- Ranch or Honey Mustard for dipping

Directions:

1. Take potatoes out of the fridge and let sit for a few minutes to take the chill off a bit. Meanwhile shred the cheese, chop scallions, and cook bacon then dice finely. Add potatoes and flour to a large mixing bowl and stir to combine well, then add cheese, bacon, and scallions. Take about a heaping tablespoon of mixture and roll with hands into a small ball. It if doesn’t hold its shape, add a little more flour to make the potatoes sturdy. Repeat until done.

2. Heat oil in a medium sauce pan – or use your fryer – over medium/medium high heat to about 350-375 degrees. Whisk egg into a small bowl and season with salt and pepper. Place bread crumbs in an additional bowl. Dip each ball in egg and then roll in bread crumbs until fully coated. Set aside on a sheet pan.

3. Test oil with one ball. The oil should bubble when potato is in oil and ball should take about 1-2 minutes to brown and cook through. (If takes longer the oil needs to be hotter, if it browned too quickly on the outside and the inside is still cold, the temperature needs to be lower.) Once oil is ready, add potato balls in small batches and fry for 1-2 minutes – it will depend on size. Remove with slotted spoon and place on paper lined plate to allow excess oil to drain off. Repeat until done.

4. Allow to cool for a minute or two and serve with dipping sauce.

Crescent Roll Cheesecake

i found recipe via facbook and figured why not. we love cream cheese and crescent rolls.. why not roll them all up into one. full credit for this recipe goes to ~~Southern Mama!!!






2 cans Pillsbury Crescent rolls
2-8oz Cream Cheese (room temperature)
1 1/2 cups Sugar
1 tsp. Vanilla extract
1 tsp Cinnamon
1 stick butter (1/2 cup real butter not margarine)



Spray a 9 x 13 pan with cooking spray. Unroll and press 1 can crescent rolls into the bottom of your baking dish press the seams together. In a separate bowl blend the cream cheese, 1 cup sugar and 1 tsp vanilla (Tina used a tsp and a half, because she loves vanilla extract. I think it would be fun to try other extracts like almond extract) spread over top of dough. Unroll the second can of crescent rolls and place on top of the cream cheese mixture pressing seams together again. Melt butter and pour over top layer of crescents. Mix the reaming 1/2 cup of sugar & cinnamon together. Sprinkle cinnamon sugar mixture generously over the top. If you don’t think that’s enough cinnamon sugar on top add more its really up to you there’s no rules on this part of the recipe. Bake at 350 degrees for 30 minutes until bubbly and bottom crust is slightly brown. Cool, slice and enjoy!

Easter Deviled Eggs

So i found this floating around facebook the other day and it is a must try in this house. I am about to put my eggs on to try this. It looks fun, cool, and maybe will make the kids want to eat them LOL... i will totally post my results as to how they turned out as soon as i get them made. As for now here is the recipe :)

Easter Deviled Eggs

Ingredients

10 hard boiled eggs
food coloring
1 tsp vinegar for each color you are using
water
½ cup mayonnaise or Miracle Whip or half of each (I use Miracle Whip)

Remove the shells from the hard boiled eggs and slice each egg in half.
Remove the yolks from the egg halves and place in a bowl. Set the yolks aside.
Get enough glasses or mugs for the number of colors you want to use. Fill the mugs or glasses ⅔ of the way full with cold water.
Add 3 drops of desired food coloring along with 1 tsp vinegar to each mug or cup.
Place egg whites in the mugs and allow to sit in the food coloring until desired color is reached. I could fit 3 egg whites in each of my mugs at a time.
Remove whites from dye and drain on a plate lined with a couple of paper towels.
Take the reserved yolks and mash them with a fork. Then mix in the ½ cup mayonnaise with the mashed yolk.
Pipe or spoon the yolk mix into the colored egg whites. Makes 20 deviled egg halves.

Velvet Bars

These are so delicious and so easy to make. Perfect to give as a gift to your favorite valentine.

Velvet Bars

1 stick (8 Tbl.) butter, softened
1 german chocolate cake mix
1 egg
1 oz. bottle red food coloring

Cream Cheese Layer

16 oz. cream cheese, softened
1/2 c. sugar
2 eggs
1 tsp. vanilla extract

Preheat oven to 350 degrees. For the bars: combine butter, cake mix, egg and red food coloring. Batter will be stiff. Spread into a greased 9 X 13 inch cake pan. For the cream cheese layer: Beat together the cream cheese and sugar until creamy. Add the eggs and vanilla and beat until smooth. Spread over batter. Bake for 40-45 minutes or until bars barely start to pull away from sides of pan. Cool completely before cutting.

3 kids and 4 dogs...

You know having three kids and four dogs in the house can leave things not smelling to nice. You know when your toddler decides to leave orange peelings in the couch or one of your dogs decides to track in mud and stuff from this 20 minutes of digging in the yard. Yeah those are my everyday moments in my home.

But, i was able to try out glade expressions through bzzagent for free. I got to try the fragrance mist and the oil diffusers. I love using the fragrance mist in my living room/kitchen area. It brings that hint of warm feeling when i spray it. You know when u can walk up to your couch and sniff it and smell the awesomeness it leaves. Yeah thats my job of the day. I have also but the oil diffusers in the bedrooms and bathrooms.

We all know how 7,5, and 2 year olds can make their rooms a mess and make weird smells come out of them at times. It also helps for the musty dog smell in case my dogs decide to play in the ran and then run in the house and  "clean" off before i can grab them all and wipe them down.

All and all i have nothing bad to say about these products expect for the fact that i wished they came in more scents. And they made bigger cans of fragrance mist (hehe). Maybe even different styles for the oil diffusers. They look nice don't get me wrong but everyones house looks different.

Schick Hydro

All of us women know that we are always looking for that perfect shave. You know that one u get when you use ur s/o razor. Well i was able to be in a 100 percent free champion from bzzagent. In this champion i was given a shick hydro razor and asked to use it and give my opinion.

My opinion of the razor is i love it. It feels just like im using my husbands razor. It has awesome moisturizing serum that makes my legs feel nice and smooth and nice and silky without leaving them dry like most razors seem to do now days. The handle is nice and long and has a nice form so gripping is easy and not uncomfortable. I seem to not have to shave my legs as often as well. When we with razors it feels like i need to shave everyday it keep them nice and smooth. This is totally a razor i will be keeping in the bathroom.

Two books i must talk about...

I know I've not been on here in about a year. Life has moved by pretty fast. Kevin done a 9 month deployment over seas. Once he returned we got ready to pcs. June came and we now live in fort hood texas.

Anyway back to why I'm writing this. For the past few weeks i have reading to awesome books and i can't help but share. If you into world history and/or mystery books i really think you would like these. I'm not going to lie the beginning of the first book was a little slow but after a few pages i couldn't put the book down. Getting to read a book that is themed in the time of medieval times with after the plaque just makes you feel like u were there. I think the characters could have been written out a little better on what they looked like at times but other than that to me the book was a good read. Here are links to them on amazon.
